Wildlife Weekend · 10 October
An autumn dinner with ingredients straight from the estate's own grounds.
Saturday 10 October
When the leaves colour the park and the season's first hunt is over, we open Thoresta for an evening centred on what we love most — the finest ingredients, carefully prepared and served in a manor setting.
Roe deer, fallow deer and wild duck live on the land around Thoresta. The kitchen team composes the evening's menu from what the hunt has provided and what the season offers — wild mushrooms, root vegetables and herbs from the surrounding countryside. A dinner that is only possible this evening, in this place.
The evening
A menu built around the season's hunt on the Thoresta estate — roe deer, fallow deer and wild duck in the flavours of autumn.
Optional wine pairing carefully selected by our sommeliers to complement the deep, rich flavours of the autumn game menu.
Thoresta in autumn is something entirely special — the park in copper and gold, an open fire and an evening that lingers in the memory.
The menu
The menu is not revealed until you sit down at the table — it is finalised once the hunt is over and the ingredients are in. In previous years the evening has featured fallow deer tartare, wild duck and seasonal wild mushrooms, among other highlights.
